LOW CARB MEXICAN PIZZA

Yield: 2 servings

INGREDIENTS

  • ½ pound ground beef, 85% lean
  • 1 tbsp extra virgin olive oil
  • 1 tbsp chopped yellow onion
  • 1 clove garlic, chopped
  • 1 egg
  • 2 oz cream cheese, softened
  • 6 oz whole milk mozzarella cheese (don’t use fresh – you want a firmer bite for this)
  • 1 cup grated cheddar or monterey jack cheese
  • 3/4 cup almond flour
  • 2 tbsp diced green pepper
  • ¼ cup taco sauce (check the labels to make sure this is low carb)
  • 1 tbsp chopped fresh cilantro
  • 1 tbsp chopped green onion
  • salt and pepper to taste
  • ½ tbsp. chili powder
  • ½ tbsp. cumin
  • ½ tbsp. paprika
  • ½ tsp salt
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp oregano
  • ¼ tsp coriander
  • ¼ tsp cayenne pepper

PREPARATION

-Preheat oven to 400 degrees.  Mix all spices together and set aside. This will serve as your seasoning for the ground beef.

-Heat 1 tbsp olive oil in a skillet over medium high heat.  Add onions and garlic and cook for 1-2 minutes until fragrant, taking care not to burn.  Add ground beef to the pan and cook until all pink is removed from the meat, 4-5 minutes.  While the meat is cooking, stir in the spice mixture so that it coats the beef.

-To prepare the dough, placed the shredded mozzarella cheese in a microwave safe dish and cook on medium power for one minute, until the cheese is melted.  Add the almond flour, softened cream cheese and egg.  Season with salt and pepper. Stir to combine thoroughly.

-Rub your hands with a bit of olive oil so they don’t stick to the dough, and flatten the dough onto a parchment paper lined baking sheet.  Drizzle with 1 tbsp olive oil.  Bake for 10 minutes, or until edges begin to brown.

-Remove baked crust from oven.  Top with taco sauce, leaving 1/2 inch around the edges without sauce. Sprinkle the seasoned ground beef across the pizza.  Top with green pepper and sprinkle with cheddar cheese to evenly coat the top of the pizza.  Return to oven for 6 minutes, until cheese is bubbling.  Sprinkle with green onion and cilantro.  Serve and enjoy!
